I’m on a constant quest to find simple dinners, and boy have I found one! This one pot chicken broccoli alfredo is a cinch to whip up and it’s always a family favorite.
I’m usually not a fan of “quick” meals that ask for things to be pre-cooked, but now that I have my Instant Pot, I don’t mind. I literally threw a pound and a half of frozen chicken in the Instant Pot with a cup of water, pressed poultry, and went to take a nap. When I woke up the chicken was done, staying warm in the Instant Pot. Genius.
You can make this in any pan that will boil water and saute. I’m currently having a love affair with my Rockcrok, so that’s what I used. I don’t know how it works, but I can cook my pasta without salt and it still tastes great. Plus, I can cook it in the microwave, which is awesome.
After I microwave the pasta, there’s a bit of liquid left in the Rockcrok. I use that to thin the alfredo sauce and cook the broccoli. Then toss in the chicken and you’re done!
