Recently I was searching for a delicious, light dessert that would be good for a family get together. After all, it’s finally spring and I wanted to celebrate! This fruit pizza was the perfect thing.
I searched Pinterest for fruit pizza recipes, but what I found was many variations of the same thing; sugar cookie crust, cream cheese frosting. That wasn’t what I was looking for, so I made some adjustments. My version isn’t too sweet, and it isn’t too heavy. It’s light and flaky, and so yummy.
I was making this for a crowd of 12, so I doubled the recipe, but here you’ll find just the regular instructions.
Thaw out the puff pastry sheet and unfold it on a lightly floured surface. You can reshape into any other shape, but the pastry will be fluffier if you just leave it as a square. Pay no attention to my pictures… let’s just say I can say from experience it’s better with less fuss.
Bake at 400 on a greased baking sheet for 12-15 minutes until the pastry is golden brown. Remove from the oven and let it cool completely.
Cover the pastry with marscapone cheese, like frosting. Then arrange your fruit in any sort of pattern you like – rainbow or random. It’s all good!
